Lyla

Opened in late 2023 at No. 3 Royal Terrace, Lyla pairs an elegant dining room with a tasting menu that centres on responsibly caught Scottish seafood and seasonal produce. Guests begin upstairs for snacks and an aperitif before moving to the dining room; dinner is a ten-course experience, with a shorter lunch at weekends. The result is precise cooking in a calm, refined setting, letting Scottish seafood and seasonal produce take the lead.

Our Key Contributions

Our work with Lyla focused mainly on front of house: sourcing and designing pieces that sit effortlessly within Lyla's elegant, light-toned interior while keeping the spotlight on the food. Working from architectural renders and early site images, we proposed a calm palette of textures and muted glazes that reads as one across the room.

We proposed Odd Standard and Bird & Branch for the majority of the service, then layered accents from across our collective - Aku Ceramics, Julija Pustovrh and Sampere Ceramics. Odd Standard supplied the backbone of service pieces: generous plates and bowls, plus smaller statements and pedestals to punctuate key courses. Bird & Branch produced the wooden elements, including bespoke sycamore cutlery rests and pedestal plates used for snacks, carried through the meal as needed. Materials were chosen for beauty and service, and designed to wear in gracefully.

Answering a request for a discrete service feature, we developed a bespoke tray stand with Faisal Malik with an aim to blend with the room’s tone and proportions, while earning its keep in daily service. Timelines were tight; we coordinated samples, approvals and deliveries with the kitchen and design teams to meet key dates. We continue to support Lyla with straightforward re-orders across makers and Stuart's other projects in Edinburgh; Noto, Tipo and Aizle. 

I have been working with Kinn Collective for a few years now, we produced a whole range of crockery for Aizle and when we opened Lyla we did everything with Kinn; from the crockery to the cutlery, service pieces… everything a guest would touch or feel. I haven’t ever received a service like Kinn’s before, I would say it’s very unique in that sense, a very personable experience. They massively understood my brands and the brief. I truly feel we couldn’t have opened Lyla to the success we did without Mat, Laura and the team.

Kinn Collective supported all the ideas I had and really saw it through from a simple conversation all the way to the delivery of all the items. It was amazing to see how they went far beyond my expectations and delivered on every promise, never letting us down, always having practical solutions and understanding that I was opening a restaurant under pressure. They never added, only took away my work load. I feel indebted to them, just simply brilliant people!
